Buffalo Chicken Wraps

An easy but tasty dinner option… great for those days where you’d rather be by the pool than in the kitchen (ok, so that’s everyday… but you get the point).

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 cups buttermilk
  • 2 cups cornflakes
  • Flour tortillas
  • Lettuce
  • Cucumbers
  • Carrots
  • Blue Cheese
  • Greek Yogurt or Blue Cheese Sauce

* can also make with ranch instead of blue cheese

  1. Cut boneless, skinless chicken breast into bite sized pieces.
  2. Add buttermilk and chicken to a Ziplock bag and let “marinate” overnight.
  3. In a separate Ziplock bag, crunch up cornflakes.
  4. Dip chicken pieces into cornflake crumbs until fully coated.
  5. Place coated chicken pieces on a greased cookie sheet and bake at 375* for 15 minutes.
  6. Remove chicken and assemble wraps with:
  • Flour tortillas
  • Sliced cucumbers
  • Lettuce
  • Carrots
  • Blue Cheese crumbles
  • Blue Cheese sauce (you can make yourself by mixing Greek Yogurt with Blue Cheese crumbles)
