Our family friend Shelley created this amazing Macaroni Salad… one of the top reasons I look forward to summer every year!

Macaroni Salad

Shelley’s Macaroni Salad

Serves 4

  • 4 4oz cans sliced olives
  • 2 celery stalks
  • 1/2 small red onion chopped
  • 6 sweet pickles chopped
  • 1 package salad macaroni, cooked in salted water

Mix in a small bowl until smooth.

  • 2 cups mayo
  • 1 1/2 tsp ground mustard
  • 1 tbsp sweet pickle juice
  • salt and pepper

Combine all ingredients in large bowl.  Use only enough mayo mixture to moisten salad.  You may not need it all or salad might become runny.

  • 6 hard boiled eggs chopped

Blend eggs into salad. Serve chilled.
